INGREDIENTS 4 Pax:
400 g of arboreal rice or Bomba rice.
100 g of Iberico ham, or Iberico pork shoulder cut into thin slices.
A clean piece of Iberian ham fat.
150 g of mushrooms or champignons.
1 large onion.
1 cloves of garlic
1 liter of hot chicken or vegetable broth.
100 g of Parmesan cheese or equivalent.
½ cup (100 ml) of white wine.
1 tablespoon butter.
Olive oil to taste
Pepper to taste
ELABORATION:
Have a pot or other similar utensil. Place over low heat with a little olive oil next to the piece of iberico ham fat and let it melt. Remove the piece that has not melted.
A minute later, add the butter and let it melt. Don't let it get too hot. Add the onion, very finely chopped, and the garlic clove. When the onion is almost done, add the mushrooms and stir.
Allow these ingredients to simmer, stirring constantly, without allowing them to brown. The onion will take on a translucent appearance.
Then you add the rice and give it a few turns so that it takes on all the flavors for a minute.
Add the white wine and stir until the rice absorbs it.
At this moment the process to achieve creamy rice with Iberico ham begins. Remember that for this the broth must be very hot.
Add a little broth, and wait for the rice to absorb it. You must be moving it to release the starch and give that creamy texture. Then add some more, and wait again. Repeat this, until the rice is the desired creamy consistency.
