Which ham to buy for value for money?
There are three main types of ham that can be bought in terms of their value for money, or quality/price ratio: Serrano ham, Iberian ham and acorn-fed Iberian ham. Serrano ham has been a fan favourite in Spain for a very long time. It is obtained from the salting and drying of the hind legs of the pig. This is called shoulder (“paleta” or “paletilla”) when the ham is derived from the animal’s front legs. Serrano ham is contrasted with cooked ham, also known as “York ham” or “sweet ham”. The reason why it’s called Serrano is because of the custom of curing the meat in high-altitude locations in the mountains (“sierras” in Spanish), where low temperatures facilitate curing. The pig itself may be white, or of the Iberian breed (“Ibérico”). This animal’s ham is called Iberico ham and tends to have a higher price compared to Serrano ham, as the breed is more highly valued.
Bellota Iberico ham (the acorn-fed iberian ham), is derived from the animal fed on acorns during the “montanera” season, or fattening period. The white pig is not fed acorns. You can buy serrano ham at our online store today and taste all varieties of best quality hams.
Other popular varieties available to consumers are more infiltrated types of ham with more back fat than white pork ham. Acorn-fed pigs are raised and fed in the open air in Spanish pastures and meadows, and feed on wild fruits, herbs and acorns during the montanera season. These animals are either 75% or 50% Iberian breed, but 100% racial purity breed can also be found – this is highly valued and is known as “Pata Negra” ham, or black leg. The diet and aging does not change – the only difference is the degree of racial purity. Acorn-fed pigs are only fed acorns from October to March, during the montanera, or fattening, period. The rest of the year they are fed on cereals and legumes.

In Spain there are in fact five Protected Designations of Origin for hams, the fifth one for the Serrano ham from white pigs. Jamon de Teruel is the best-selling ham with a differentiated quality seal PDO in Spain. The ham engraved by fire with the emblematic 8-pointed star is far superior to the other four PDOs that are available in Spain in terms of cured hams. In second place we find the Jamón de Trevélez, which is protected by the PGI (Protected Geographical Indication) seal.
All Spanish hams and pork shoulders with Protected Designations of Origin implies a comprehensive control from the beginning to the end: from the control of the pig in the pastures (control of breed, weight, identification and feeding), passing through the identification of the pieces in slaughterhouse (placement of seals), carrying out the audits in the drying room and warehouse and ending with the control of the final product before going to the market, initialed with the Council's back label. All these steps (pig by pig, piece by piece) are audited by the technical services inspectors of the Regulatory Council, thus guaranteeing a strict control system with guaranteed traceability. It is essential that both the exploitation and the slaughterhouse, and the drying room-winery are in the Autonomous Community of Extremadura, which allows a stricter control if possible, despite its geographical extension.
