When you receive the Benito Bellota Iberico Ham 50% Iberian breed, you must remove the protective wrapping and place it in a cool and dry place. Protect the meat of this appreciated Ham with a layer of the initial fat from which you have removed it to preserve its smoothness. Always use suitable and well-sharpened utensils to obtain the best characteristics of the ham. You should start with the stifle, the narrow part of the piece that we observe with the hoof down, the opposite of the club, which is wider and fleshy if we put the hoof up. The ideal temperature for consumption is 22ºC.
