Iberico Ham Ravioli Recipe

Here in Spain we also love Italian pasta, but in the recipe I am going to propose in this article, we are going to give it a Spanish touch. paleta iberica goes very well with many recipes, and as it has more fat than ham, it will be more unctuous and fuller in flavour.

When we are going to use a cured shoulder in a cooking recipe, if we are going to sauté it or heat it, it is best to use a good piece but it is not necessary to buy a paleta iberico de bellota; but if we are simply going to put it on top of freshly cut, you can use a paleta de cebo de campo or even pata negra.

Ingredients for the Iberico paleta Ravioli recipe.

- 12 thin slices of Iberian shoulder of pork

- 1 tray of cherry tomatoes

- 50 g grated Parmesan cheese

- 1 tablespoon tarragon

- 20 g pine nuts

- Salt flakes

- Fresh parsley

- 100 ml extra virgin olive oil

PREPARATION OF THE RECIPE

Cooking the pasta doesn't have much of a secret, it's up to your preference whether to leave it al dente or more cooked, so I won't go into this step any further.

Cut the slices of Iberian pork shoulder very thin but a little bit long, as you will have to fold them later. You can also use sliced Iberian shoulder if that's easier.

Sauté the tomatoes in a frying pan over a high heat so that the skin wrinkles and then lower the heat so that the tomato flesh poaches. Add the pine nuts, brown and add the grated Parmesan cheese and freshly chopped tarragon. Set aside.

Blend the oil with the fresh parsley, crush, strain and salt to taste.

Presentation of the dish: spread the slices of Iberian paleta in a cross, as many as you are going to use ravioli.

Place a ravioli in the centre and close the four corners of the slices of Iberian shoulder. Repeat this process with all the ravioli until the Iberian ham is finished. Distribute the warm tomatoes with the parmesan and tarragon.

Once finished, pour the parsley oil around the ravioli and a little parsley oil on top.
