In a culinary recipe in which you are going to use ham, I would not use an acorn-fed Iberico ham, since we would lose the subtle nuances that these pieces have in every way: taste, aromatic and texture. Mango and Spanish Ham Salad Recipe.
INGREDIENTS:
1 large mango
100 grams of arugula
100 grams of lamb's lettuce
125 grams of cherry tomatoes
100 grams of mixed nuts (walnuts, hazelnuts, pine nuts)
125 grams of Serrano or Iberian ham in thin slices
80 milliliters of extra virgin olive oil
15 milliliters of apple cider vinegar
1 sprig of parsley
1.5 sprigs of thyme
pink peppercorns
Pepper
Salt
ELABORATION:
Wash the mango and cut it into 7-8 thin slices. Peel the rest and dice the pulp. Wash the arugula, lamb's lettuce and cherry tomatoes; cut the latter in half.
Chop the nuts, except the pine nuts, simply breaking them a little with a mortar, but leave medium pieces. and sauté them for a couple of minutes in a frying pan greased with 5 ml of oil. Season and remove.
Spread the arugula and lamb's lettuce on a wooden platter, forming a bed, and spread 5 or 6 mango slices on top. Cover with the slices of Iberian or Serrano ham and add the tomatoes and nuts. Sprinkle with 1 teaspoon of crushed pink pepper and garnish with the parsley and 1 sprig of thyme.
THE SAUCE
To make the mango vinaigrette, crush the mango cubes with 80 ml of oil and the vinegar. Salt and pepper and add ½ sprig of chopped thyme. Transfer to a bowl and add the remaining mango slices. Serve it with the salad or put it in a kitchen bottle to paint the plate.
This delicious preparation is also perfect by substituting spinach for arugula and peach for mango.
