Iberico ham croquettes

Ingredients:

1 liter of whole milk

2 tablespoons Butter

2 heaping tablespoons of wheat flour

200 g of finely chopped Iberian or Serrano ham

1 medium onion, finely chopped

A pinch of nutmeg.

A pinch of ground white pepper.

Beaten eggs and breadcrumbs to wrap the croquettes.

Preparation of Jamon Serrano croquettes:

Chop the onion and the jamon iberico well so that it is in very small cubes. You put the onion in the pan over low heat with a little virgin olive oil or butter so that it is cooked well. When it is done, add the two tablespoons of butter, the flour and stir well until they are integrated and the roux is made. All this over low heat so that the flour does not burn.

On the other hand, heat the milk. It does not need to boil, just temper it. Add the serrano ham cubes to the dough and give it a few turns just before incorporating the milk little by little, never suddenly, and as it thickens, you add more milk.

When the dough is done, we test to see if salt is needed, keep in mind that the ham already has it, so check it before adding more. We add a little ground nutmeg and a little white pepper.

You should let it cool and even cover it with plastic wrap (as long as the dough touches the paper so it doesn't dry out) and put it in the fridge, this will help it harden and make the croquettes easier.

When the pasta is cold, form the croquettes, pass them through flour, egg and finally breadcrumbs. Now you just have to fry them in plenty of oil in batches of four or five.
