"Jamón Pasión" IGP Trevélez Spanish Hams have to meet a series of requirements that make them unique among other hams. The pieces are obtained from crosses of white pigs of the Large-White, Duroc-Jersey and Landrace breeds, and must have a low percentage of salinity.

The entire process of making Serrano ham is done in Sierra Nevada, as required by the Trevélez Geographical Identification regulatory council.

When purchasing this Cured Serrano ham with more than 20 months of curing, you must bear in mind that you must always carry seals that guarantee that they are authentic and that they have passed the exhaustive quality tests of the PGI. In this case the label is Red and you can get them in weights of 8-8.5 kg. and 8.5-9 kg, both in whole piece, boneless and vacuum packed and sliced in ready-to-eat 100-gram vacuum sachets.

Conservation and Tasting of trevélez ham

When you buy Jamón de Trevélez "Jamón Pasión" red label, you should get rid of its wrapping and protective mesh and put it in a cool place protected from sunlight. You should always keep a layer of bacon, once started, to cover it and prevent it from drying out and losing its properties. A good idea is to scrape off some of the bacon with the blunt end of a knife and spread it over the lean part of the cut to keep it juicy.

In the case of buying boneless or sliced Serrano ham, you should keep it refrigerated and take it out of the fridge 20 minutes before consuming it so that it reaches room temperature and can offer all its qualities in terms of flavour, aroma and texture.
