The Lot is made up of a Boneless 100% Iberico de bellota shoulder ham PDO Los Pedroches of the Jamón Pasión brand, with an eligible weight in ranges of 500 grams from 1.5kg to 3kg.
The loin caña, like the shoulder, comes from purebred Iberian pigs raised in the open-air pastures and fed with acorns during the montanera season and from pastures and wild herbs. The weight of the 100% acorn-fed Iberian loin is 550-600 grams.
Iberico pork shoulder Conservation
When you receive the pork shoulder from the Jamón Pasión online store, you should put it in a cool, dry place away from the sun and heat. Once started, you must keep it refrigerated in the least cold part of the refrigerator and take it out 20 minutes before consuming it again. The 100% Iberian loin must follow the same conservation process.
