A special pasture framed in the Valley of Los Pedroches, in the north of the province of Córdoba, which occupies one of the largest holm oak forests on earth: around 300,000 hectares of trees and fields offer Iberian pigs the ideal environment to grow up in freedom and feed on acorns and wild herbs, which will be reflected in the quality and flavor of the shoulders and 100% Iberian sausages, with a natural curing time of 24 months for shoulders and 4 months for sausages.

The Lot consists of a boneless 100% Iberian acorn shoulder PDO Los Pedroches of the Jamón Pasión brand, with an eligible weight in ranges of 500 grams from 1.5kg to 3kg.

The cured meat chorizo, like the ppork shoulder, comes from pure-bred Iberian pigs reared in open-air pastures and fed on acorns during the montanera season and on wild pastures and herbs. The weight of the chorizo is 400-450 grams.

Spanish Ham Preservation

When you receive the pork shoulder from the Pasión ham store, you should put it in a cool, dry place away from the sun and heat. Once started, you should keep it refrigerated in the least cold part of the refrigerator and take it out 20 minutes before consuming it again. The 100% Iberian chorizo must follow the same conservation process.

They are sent vacuum packed in a protective atmosphere in three weight formats: 1.5-2 kg., 2-2.5 kg. and 2.5-3kg.
