The Cinco Jotas Pata Negra Shoulder ham comes from purebred Iberian pigs, that is, from a 100% Iberian mother and father. Its genetic purity, free-range breeding in pastures and feeding on acorns and wild herbs, give it a high degree of quality, as well as its careful manufacturing process in natural drying sheds and cellars.
The 5J hams and shoulders, together with the Sánchez Romero Carvajal (SRC) are among the best Iberico hams in the world, thanks to the delicate and traditional process from pig breeding in the Natural Park, to its subsequent salting, curing and maturing treatment in store.
The 5 Jotas Pork shoulder is made with the front limbs of purebred Iberian pigs. It has a higher percentage of fat than ham, therefore, they are more intense in flavor. The hams have a more delicate flavor and a greater contrast of nuances. What is better? Without a doubt, the two pieces are excellent and it depends on the preferences of each diner.
When buying the 5 Jotas Iberico shoulder ham cut and packaged in sachets, you must keep it refrigerated at all times and take it out of the fridge 20 minutes before eating it to obtain the best characteristics of Iberico meat.
