The Iberian pata negra shoulder made by "Jamones de Juviles" has a minimum curing period of 24 months in natural dryers located in the Sierra Nevada National Park, Granada.

A piece made from 100% Iberian pigs on the maternal and paternal side, which guarantees excellent quality and a characteristic marbling, giving the meat an excellent aroma, smell and texture.

The pigs used to obtain 100% Iberian ECOLOGICAL acorn-fed ham shoulders are raised in the wild in the best pastures in Spain and fed with acorns and native wild herbs during the montanera stage.

Conservation of the 100% Organic Iberian Shoulder

Like any Iberian ham shoulder, it must be properly preserved so that its incredible characteristics are not altered. It's very simple, you just have to keep the Juviles organic acorn-fed shoulder away from direct sunlight and external heat sources such as radiators or stoves. When you receive it at home, remove all packaging and just drop a clean kitchen towel on top. Once you start, you can also cover the cutting part with plastic wrap, which you should change periodically.
