Conservation of Organic Spanish Ham
Any leg of ham must have a minimum of care at home so that it maintains its wonderful characteristics for as long as possible.
It is essential that as soon as you receive it, remove all the packaging and place the ham in an environment away from sunlight and external heat sources such as stoves, ovens or machines that emit high temperatures.
If you leave the ham wrapped in its casing, it will accumulate moisture and it is very likely that mold will appear and alter the flavor and smell of the meat.
Once the organic serrano ham has started, just cover it superficially with a clean kitchen cloth. If you are going to spend several days without cutting ham, it is also necessary to cover the cut part with food film paper. It is not a good idea, as is customary, to cover it with a slice of bacon and leave it for several days, since the bacon will oxidize over time and transfer those aromas and flavors to the ham.
